How to Make Fruit Pizza: Sugar Cookie & Cream Cheese Frosting Recipe

Mmm, fruit pizza. Fruity, colorful, and light tasting, it’s such a fun, fresh dessert– perfect for summertime parties!

I made it with my daughters a few weeks ago since they had never had a fruit pizza before. When I mentioned something about making the frosting, they were so confused, because pizza doesn’t have frosting on it, haha.

I explained that fruit pizza is really just like a giant sugar cookie with cream cheese frosting and fruit on top, and their little minds were blown—they were thinking it was more like normal pizza, but somehow sweet and with fruit on top (which also sounds pretty good, haha).

Regardless of what their original expectations were, they were thrilled with the results! And I quite enjoyed it myself, if I do say so. 😉

What kinds of fruit go on fruit pizza?

Whatever you like! I love that it’s so customizeable. I, personally, like it best with kiwi, bananas, and an assortment of berries. So good!

So let’s learn how to make fruit pizza, shall we? 😊

How to Make Homemade Fruit Pizza (Sugar Cookie Crust & Cream Cheese Frosting)

First, turn your oven to 375 degrees Fahrenheit so that it can heat up while you’re making the dough.

Then cream ½ cup of softened butter with ¾ cup of sugar in a large bowl.

Beat in 1 egg and 1 teaspoon of vanilla extract.

Next, add in 1 teaspoon of baking soda, ½ teaspoon of baking powder, ¼ teaspoon of salt, and 1 ½ cups of all-purpose flour and mix until everything is well combined.

On a piece of parchment paper, roll out the dough into a circle, about ¼ inch thick. Then move the dough along with the parchment paper, onto a baking sheet.

Bake in your preheated oven for about 12-15 minutes; the edges will be starting to look golden. Allow to cool completely before frosting.

To make the frosting, beat 4 ounces of cream cheese, 1 tablespoon of softened butter, ½ teaspoon of vanilla, and 1 ½ to 2 cups of powdered sugar all together until smooth.

Once the cookie part is completely cool, spread the frosting all over it. Then top it with any kind of fruit you like!

*Tip: Use a clean dish cloth or paper towel to pat dry the fruit after it’s rinsed before placing it on the pizza!

And you’re done! Time to slice up that pizza and dig in! Doesn’t it just taste like summer?

Can you freeze fruit pizza?

Yes and no—you can absolutely freeze the cookie and frosting part, but not the fruit. So you can do everything except  put the fruit on top, and just wrap the giant frosted cookie up really well in plastic wrap and pop it in the freezer until you’re ready for it.

Allow the pizza to thaw and then add your fruit toppings, and you’re good to go!

Can you make it the day or night before?

Yes, you can. You do want to be extra careful with your fruit, though. If you’re putting any fruit on that might start to brown (like bananas), dip them in pineapple juice before you put them on the pizza.

Ingredients
  

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups all-purpose flour
  • fresh fruit of your choice

Frosting

  • 4 oz cream cheese or Neufchatel
  • 1 Tbsp butter, softened
  • 1/2 tsp vanilla
  • 1 1/2– 2 cups powdered sugar

Instructions
 

  • Turn the oven to 375°F so it can heat up while you prepare the dough.
  • In a large mixing bowl or stand mixer, cream together the butter and sugar.
  • Mix in the egg and vanilla.
  • Add the baking soda, baking powder, salt, and flour and mix it all together.
  • On a piece of parchment paper, roll out the dough into a big circle until it's about 1/4 inch thick and around 12 inches across. Move the parchment paper with the dough on it to a baking sheet.
  • Bake in the preheated oven for 12-15 minutes, or until the edges are starting to turn a golden brown. Allow to cool compeltely.
  • To make the frosting, beat together all of the frosting ingredients until smooth.
  • Once the cookie base is completely cool, spread the frosting all over it.
  • Top with any fruits you'd like.
