Mediterranean Salsa Recipe: An Incredibly Refreshing and Healthy Snack

While visiting one of my sisters this past summer, we were wanting a fresh summer snack to share with some friends at a get-together. She had had a Mediterranean salsa at a party a few weeks earlier and thought it’d be a good one to make. The woman who made it didn’t have a recipe – she basically just said to put some of this in and then a little of that until it looked good.

So my sister and I set out to recreate it. I have no idea if it’s like the one she had before, but it is GOOD! I make it all the time now.

This recipe makes a large amount of salsa, but between my husband and me, it rarely lasts more than two days.

Fresh tomatoes, cool cucumbers, and sweet peppers mixed with the salty tang of Kalamata olives and feta cheese…. Oh man, I could definitely go for a big bowl of this stuff right now! Mmm…

This salsa is perfect for any time you want something extra tasty but also healthy. We like it so much in our house that we often pair it with Mediterranean Chicken and have it for dinner.

My stomach is growling just thinking about it, haha!

Prepare the vegetables

First, gather and rinse the veggies: 1 cucumber, 1 yellow bell pepper, 1 green bell pepper, 3 or 4 tomatoes, and ¼ of a red onion (no need to rinse the onion).

Then remove the seeds from the cucumber and peppers and dice all the veggies. Make sure the red onion is finely diced. Put everything in a big bowl

Add a few more things…

Rough chop a heaping ¼ cup of Kalamata olives and add it to the bowl of veggies along with 4 ounces (about 1 cup) of crumbled feta cheese and a tablespoon of lemon juice.

Mix it up

Stir everything together until it’s all evenly mixed.

Time to enjoy this Mediterranean salsa!

Serve it with pita chips and/or tortilla chips.

Ingredients
  

  • 1 cucumber
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 3 or 4 tomatoes
  • 1/4 red onion
  • 5 Tbsp Kalamata olives
  • 4 oz crumbled feta cheese
  • 1 Tbsp lemon juice

Instructions
 

  • Rinse all of the vegetables except for the onion.
  • Remove the seeds from the peppers and cucumber.
  • Dice all of the veggies. But sure to finely dice the red onion.
  • Roughly chop the olives.
  • Combine everything, including the feta cheese and lemon juice, in a large bowl.
  • Enjoy! Serve with pita and/or tortilla chips.
