Method
- Rinse all of the vegetables except for the onion.
- Remove the seeds from the peppers and cucumber.
- Dice all of the veggies. But sure to finely dice the red onion.
- Roughly chop the olives.
- Combine everything, including the feta cheese and lemon juice, in a large bowl.
- Enjoy! Serve with pita and/or tortilla chips.
