This taco soup is tasty, healthy, and suuuper easy!

It’s one of those wonderful meals that you can throw everything in the crockpot in just a few minutes in the morning and you don’t have to think about it again until you’re ready to eat!

And even though it’s crazy simple, it’s GOOD! Even though we have this regularly, my oldest daughter still usually requests it for her birthday dinner each year.

Easy. Healthy. Everyone likes it. It does not get better than that!

How to make healthy taco soup in the crockpot

Put 1 ½ pounds of chicken, 1 can of kidney beans (liquid included), 1 can of corn (liquid included), 1 large can of diced or stewed tomatoes, 2 cups of water and 1 packet of taco seasoning into the crockpot. Let everything cook on high for 4—6 hours or on low for 10—12 hours.

Shred the chicken. I like to use my potato masher to do this – just smush the chicken against the inside of the crockpot until it’s all shredded (it’ll fall apart pretty easily). At this point, you can taste and add some salt, if needed.

THAT’S IT! You’re done! Go and eat!

What goes with taco soup?

We usually keep it easy and have it with crushed tortilla chips, shredded cheddar cheese, and sometimes a bit of sour cream. But you could also chop up some avocado and/or cilantro, maybe a few lime wedges, as add ins if you wanted to jazz it up. You will have extra time before dinner, after all, since you already did all the hard work (ha!) in the morning. 😉

Ingredients
  

  • 1 1/2 lbs chicken breasts, tenderloin, or thighs will work
  • 1 can (about 15 oz) kidney beans, liquid included
  • 1 can (about 15 oz) corn, liquid included
  • 1 large can (about 28 oz) diced or stewed tomatoes
  • 1 packet taco seasoning
  • 2 cups water
  • to taste salt

Instructions
 

  • Put everything in the crock pot (slow cooker) on high for 4-6 hours or on low for 8-12 hours.
  • Shred the chicken (I just use a potato masher and smush it against the sides of the crockpot) and add salt, if needed.
