Sweet Potato Beef Stew (Making With Megan)

Ingredients
  

  • 1 1/2 lbs beef, cut into bite-sized chunks
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 2 Tbsp all-purpose flour
  • 1 1/2 lbs sweet potatoes, peeled and cut into bite-sized pieces
  • 1/2 lb carrots, but into bite-sized pieces
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 tsp. Worcestershire sauce
  • 1 can (14.5 oz) fire-roasted tomatoes
  • 1 can (15 oz) fire-roasted corn, drained
  • 2 cubes beef boullion
  • 1 cup water
  • 1 bay leaf

Equipment

  • crockpot

Method
 

  1. Place the beef in the crockpot (not turned on yet) and toss it with the salt, pepper, paprika, and flour until it's evenly coated.
  2. Put everything else in the crockpot and stir it.
  3. Cover and cook on high for 5--7 hours or on low for 7--9 hours.
  4. Remove the bay leaf and serve.
